How It Works: Buying a Beef Share

We sell our beef using Washington State’s Farmer Exempt Process, which means you’re purchasing a share of a live animal. Once reserved, we handle the harvest, and your meat will be ready for pickup at our trusted local butcher.

There are two separate fees:

Farmer Fee (paid to us)

Meat Shop Fee (paid directly to the butcher)

Pricing & Payment

Farmer Fee for 2025: $5.00 per pound

Meat Shop Fee (Cut & Wrap): $0.95 per pound

Smoked meats may incur additional charges

How to Reserve Your Share

A deposit reserves your half share of a whole cow.

Final Farmer Fee payment is due by October 31, 2025.

You’ll pay the Meat Shop Fee when you pick up your meat at the butcher.

Estimated Take-Home Weights

Every animal is unique, so weights are estimates:

Whole Beef: ~400 lbs

Half Beef: ~200 lbs

Quarter Beef: ~100 lbs

Each share includes an equal mix of cuts from both the front and back of the cow.

What’s in a Share? (Approximate Breakdown)

Flank: 4% (Flank steaks)

Sirloin & Roasts: 25% (Sirloin steaks, sirloin roasts)

Short Loin: 20% (T-bone, Porterhouse, NY strip, tenderloin*)

Rib: 9% (Ribeye, rib steaks, rib roasts)

Chuck: 25% (Ground beef, chuck roast, short ribs)

Brisket: 6% (Brisket, ground beef)

Shank: 4% (Stew beef, soup bones)

Choosing T-bone/Porterhouse means you won’t receive separate tenderloin filets, as they are part of that cut.

The Cut Order: What to Expect

We’ll harvest animals October 31, 2025. The butcher will call you 7–14 days later to take your cut order. Be ready to answer:

How thick do you want your steaks? (We suggest ¾” or thicker)

1 or 2 steaks per pack?

NY strip or T-bone/Porterhouse?

Ribeye: Boneless, bone-in, or as a roast?

How many pounds per pack for stew meat and ground beef?

Roasts: What size (2, 3, or 4 lbs)? Bone in or out?

Do you want short ribs or prefer them ground?

Would you like brisket or soup bones included?

The butcher can walk you through your choices. Just let them know you’re calling for your beef share order from us!
